There is an ONLINE Nutrition Entrepreneurship course offered at Northeastern University, but enrollment is open to any students attending other universities! You can transfer credit back to your respective institution for credit (but check with your school for the specifics).

This course will include advanced analysis of the problems and considerations involved in establishing, organizing, and operating a nutrition-based business or clinical nutrition practice. The course will focus on tools, techniques, and resources necessary for establishing a business, including developing a business plan, marketing and advertisement, and reimbursement and legal and regulatory matters.
Tricia Silverman, RD, LDN, MBA is the teacher and she is a fantastic woman! I met her at a Nutrition Entrepreneurs DPG mini-meeting in Boston and she knows quite a deal about how to be a successful entrepreneur. You will no doubt learn a ton of applicable career knowledge from her.
So, check it out! It's good to take nutrition-related elective courses and business is a new trend for dietitians these days too!
