Hello! I couldn’t be more please to continue writing as the Weekend Plate contributor again for fall 2010. In my senior year of undergrad as a dietetics major and family studies minor at James Madison University, I’m seeing the ingredients of all of my passions come together to form one marvelous dish.
Over this past summer I had the pleasure of working with the clinical dietitians at Winchester Medical Center who taught me solid clinical skills, and Rebecca Scritchfield, a private practice RD in D.C., who taught me great counseling skills. Throughout the summer I’ve also been writing for Balanced Health and Nutrition, Rebecca’s website, as well as Her Campus (a website for college girls), as one of their health contributors.
I’m always looking for great stories, tips, and the latest news about everything nutrition and health. This year as president of JMU’s student dietetics association, I feel an immense joy in sharing learning opportunities and bringing in RD’s from all specialty areas to bring their wisdom to my members.
As the teaching assistant for a quantity food production class at JMU this fall, I’m lucky to be able to get my hands dirty and learn large scale food service. For the weekend plate, I’ll soak up as much fun information and recipes as I can along with finished product pictures and how to’s.
