There are people in this world that just hate fish…which is unfortunate for them, should they ever become my acquaintance. I make it my goal to convert the anti-fish into salmon lovers the first chance I am granted.
In my opinion, salmon is the best ‘first step’ for entering the world of fish indulgence. It just isn’t the type of food that smacks you in the face with an over powering fishiness. From tailgates to dinners, salmon is my go-to main dish for an easy fix in under 20 minutes. Whenever the boyfriend and I have salmon, we broil it in the oven with a light coating of Mrs. Dash (no salt flavoring) and olive oil, which creates a light crust over the top.

Entree
For tonight’s dinner we made two additional toppings for the salmon. The first topping was sweet: sliced peaches in reduced balsamic dressing. The second topping was a brighter option with sour cream, chopped parsley, and lemon.
Sides
Brown rice with steamed broccoli: Beef up the grain dish with veggies!
Mixed greens without dressing: Our dressing was salmon toppings.
