Daily Plate: Breakfast Cookie

Mondays, I have to be out of the house before seven, so I’m always up for trying out quick, healthy breakfast options. This past Monday, I tried this make-ahead breakfast cookie.

I can’t take credit for this one-it was inspired by Gina of Fitnessista. I wasn’t sure it would be filling enough, but it was great! I’ll definitely be making this again. It’s nice to be able to make your breakfast and eat it too on a rushed morning. Pardon my blurry cell-phone photo.

Ingredients:

1/3 cup oats (I used instant, for the added iron in the brand I get)


1/2 a banana, mashed


1/2 scoop vanilla protein powder (optional)


2 tsp cocoa powder


1tbsp almond butter


Splash of almond milk


Sprinkle of cinnamon


Directions:


Mash the banana with a fork on a small plate.


Mix dry ingredients in a bowl.


Add banana, almond milk and almond butter to bowl.

Mix until ingredients are blended.


Spread onto plate you mashed the banana on.

Cover with plastic wrap and refrigerate overnight.


In the morning, remove plastic wrap (duh) and enjoy.

Best eaten with a spoon.
