Daily Plate: Making Do

Nothing like returning home from a trip and having almost nothing in the fridge. After a weekend in Boston celebrating my sister’s college graduation (!), we had to get creative.

For lunch the next day, I had a salad with tomato, cucumber, sliced almonds, hummus, and nutritional yeast and a slice of whole wheat toast with hummus and more cucumbers (had to take a bite to make sure it tasted good…) plus a few baby carrots on the side.

That night, I steamed some broccoli that was on its last legs and heated up some marinated tofu that I bought on sale at Whole Foods and won’t be buying again. Chris was the one to take a pre-photo bite this time. I also made whole wheat cous cous. This stuff is so good.

The next day, I had leftover cous cous in another salad, this time with vinaigrette instead of hummus mixed in. In addition to tomato, cucumber, and grilled asparagus, I also threw in a little soy chicken. I figure there won’t be much in the way of mock meats in Italy, so may as well enjoy a bit before I leave.
