Recently research came out from the Netherlands regarding the Mediterranean diet and fertility. Women who adhered to the Mediterranean-style diet had a higher pregnancy rate following in vitro fertilization (IVF). The less the olive oil is handled, the closer to its natural state, and the better the oil.
Extra virgin - the best choice; its the least processed, comprising the oil from the first pressing of the olives. But most expensive!
Virgin - from the second pressing.
Pure - undergoes some processing, such as filtering and refining.
Extra light - undergoes considerable processing and only retains a very mild olive flavor.
