While I’m not a fan of traditional grilled cheese made with white bread and American cheese, once in a while a grilled sandwich of goat cheese with roasted peppers, roasted zucchini, and greens (on whole wheat, of course) hits the spot. For me, it’s about the way the goat cheese melts into a layer of warm, gooey goodness—the tangy flavor goes well with the sweet roasted veggies.
Paired with a nice salad, it’s the perfect dinner for a relaxing night!
Though goat cheese has a lot of protein (about 5 g per serving), it’s not that high in calcium, so I tend to either eat in the context of a day where other dairy or milk alternative products I eat are rich sources of it or I’ll file it under discretionary calories for the day, especially if I’m only using a tiny bit. A little goes a long way.
A few other favorite ways to enjoy goat cheese: on top of spicy soup, on a plain baked potato in place of butter, or in a salad with greens, sliced almonds, and strawberries.
