I know I’m not the only one – you come home from a busy day and you’re just hungry for some dinner when you suddenly realize you don’t know what to make! In your hunger induced madness, you throw together some of your staple ingredients - things you ALWAYS have on hand – and have a quick dinner done in no time. One day you realize that you end up eating the same things all the time because they’re familiar. You can throw them together without thinking, they’re quick, and you always have the ingredients on hand. I know you’re thinking of at least a few of these recipes right now. Mine would be pasta or white beans with tomato sauce, bean burgers, or what I call “Mexican beans” – a can of black, pinto, or kidney beans simmered with olive oil, garlic, onions, bell pepper, maybe some corn, and a few spices. I can eat this on rice, millet, a tortilla, with pasta…whatever! Leftovers make a quick lunch quesadilla too!
Don’t get me wrong. I love all of the things I listed above or else I wouldn’t eat them week in and week out! But sometimes I just need a change. My goal lately has been to find at least one recipe before my weekend shopping trip that looks manageable and that doesn’t have a bunch of strange ingredients. Then, I pick up the one or two ingredients I might not have while I’m at the store and pick a night to make it on. This not only forces me to change up my routine, but has the potential to introduce a new favorite “go-to” recipe into my rotation! Experimentation is one of my favorite things about working in the kitchen. Browsing recipes is a great way to find inspiration for a new recipe. You might not like or have the ingredients for the exact recipe you found, but it can inspire a new ingredient combination that you hadn’t thought of before!
So, try to branch out this week! Find a great recipe and jump in or pick up a new ingredient at the store and work from there! You never know what you might come up with!
