These were almost too easy…I’d bought a container of green figs and wasn’t thrilled with the taste (I’m used to black figs) but had a hunch they’d be great cooked.
These balsamic-roasted figs are delicious plain or chopped up and served on a salad with a little goat cheese and vinaigrette (use a dab of jam as an emulsifier instead of mustard for a sweet twist). I’d also recommend serving these with yogurt or even vanilla ice cream.
Ingredients:
· Green figs (black would work too)
· 1-2 T balsamic vinegar (depending on how many figs you have)
Directions:
Preheat oven to 400 F
Slice figs in half and place, cut-side up, on baking sheet (I covered the sheet in foil to avoid messy clean-up).
Drizzle figs with balsamic.
Roast until figs begin to caramelize, about 8-20 minutes, depending on the size of the figs. Mine took 15.
