The best way to do it is to make the oatmeal on the stovetop (steel-cut and rolled oats are probably better than instant) and stir in the cottage cheese for the last minute or two of cooking. It might sound weird, but it’s delicious! It sort of tastes like cheesecake, albeit high-protein, high-fiber, low-fat cheesecake…
Here’s how to make the Chocolate-Banana variety:
Ingredients
· 1/3 c rolled or steel-cut oats
· ½ a banana, sliced
· 1 heaping tbsp unsweetened cocoa powder
· pinch salt
· cinnamon
· ¼ tsp vanilla extract
· 1 tbsp ground flax (optional)
· ½ c cottage cheese
Directions
Prepare oats as directed on package, adding in the bananas right away. I like to break them up as I stir so they become incorporated into the oats. I add the vanilla about halfway through but you can add it whenever. During the last minute or two of cooking, add the flax, cinnamon, and cottage cheese.
