Daily Plate: 3 Minute Cookie

I try not to “save all my calories”  for the end of the day, and I get really frustrated by days where I’m so busy running around, going to class or work, that by the time dinner’s over, I’m still a little short. The easy way to get in those extra calories would just be to eat something kind of junky, but usually I need something with actual nutritional content as well. Ten o’clock at night, though, doesn’t really feel like the time for a big bowl of oatmeal or a sandwich.

Enter dessert. I’ve been curious about healthy dessert-type recipes lately, so I decided to try out this one I came across on Carrots & Cake (website) since I had some egg whites in the fridge that needed to get used.

3-Minute Cookie (courtesy of Carrots & Cake)

Ingredients:

 1/4 cup oats
1/8 cup liquid egg whites
2 tsp brown sugar
2 tsp all-purpose flour (or protein powder, which I used)
1/4 tsp vanilla extract
1/4 tsp baking powder
1 tbsp raisins
Cinnamon to taste
*Combine ingredients in a microwave-safe bowl.

*Flatten into cookie shape.

*Microwave for 45 seconds.

I spread a little almond butter on top and some chocolate-chip ice cream.  It was pretty good. I was suspicious of adding egg whites to oats, but it was definitely worth trying.  I might make some modifications if I make it again, like, um, not forgetting to add the cinnamon, and maybe using egg replacer instead of liquid egg whites. I think throwing in some chocolate chips or nut butter could also be tasty.
