I always get excited when we end up with eggs in the house—since I’m the only one who likes them, we only tend to buy them for a particular recipe. That usually means we end up with a few left over that need to be used somehow—by me!
One of my favorite things to make is fried rice, using leftover brown rice, whatever veggies are on hand, and a fried egg on top. The rice isn’t really fried, just mixed in to the cooked veggies to reheat it, but the egg is fried, technically, so I still feel like I can call it fried rice.
What I love about fried rice is how versatile it is—the variations are endless. I recently made some using spinach, mixed frozen veggies, and edamame. Some chopped ginger and garlic were also involved, as was some soy sauce, sesame oil, and red pepper flakes. It was a beautiful, beautiful thing.
