Daily Plate: Frozen Banana "Ice Cream"

When Chris went away for a few days (his band, My Cousin, The Emperor, had a gig in LA), I had the kitchen to myself, for better or worse. This led to quite a few weird experiments…I’d been planning to stock up on groceries, but no way was I going to lug a bunch of bags through the downpour that descended upon New York. Instead, I opted to concoct a few bizarre dishes using what was around (let’s not talk about the quinoa-kale-chickpea-marinara thing-y). Not having any ice cream was a good reason to whip up some frozen banana soft-serve for dessert.


If you’ve never made this, it’s very simple. You slice a ripe banana and freeze it for a few hours. 

When you’re ready for something sweet, put the frozen banana slices into the food processor for a few minutes. I’ve done this with a blender and while it works, it’s just not the same, so I’d recommend using a food processor if you have one. 

It’s pretty cool to watch the fruit get churned into what looks exactly like ice cream. I can’t take credit for this one—it’s one of those raw food things some genius thought up. It’s great alone or with added ingredients like chocolate, nuts and other frozen fruits. A friend of mine also said it’s great with a little almond butter thrown in the processor. I’ll have to try that one next time!
