The other night my Food Science & Tech class had one last chance to match the gold standard for the product we are creating. My group was assigned a functional ingredient, and we decided to make ginger snaps fortified with omega-3’s. The product we selected as the gold standard to try to match is Trader Joe’s Triple Ginger Cookies. The flavor is pretty darn close, but we were still having a hard time achieving that uniform shape…As it turns out, we won’t need to worry about that, as the sample will be cut up for evaluation, but it was fun to strategize ways to get what we were going for.
In the beginning, I wasn’t so sure about baking (it’s not my strength), but I’m really glad we went with this. It’s been a blast observing our results and manipulating the recipe over and over to get exactly what we want.
They’re being evaluated in next week against samples of the real deal, so we’ll see if we fool anyone!
