Daily Plate: Weird Combo

The other day, I could not figure out what I wanted for lunch. I had just gone to the store and bought a whole bunch of kale, so I was considering making one of my green smoothies and eating it with cereal but Chris had also left the dregs of a rice dish in the fridge for me—Zatarain’s Jumbalaya mix with a tiny bit of veggie sausage and spinach thrown in, if you’re interested. There wasn’t enough left to make it a meal, though (about 2/3 of a cup and barely any sausage or spinach left). Still, he loves this stuff and was really excited about sharing it with me (so cute), so I figured I may as well incorporate it into something.

For a few minutes I considered a simple salad with greens, tomato, and avocado and tossing the cold rice in, as I’ve been wont to do with leftover rice. What about protein, though? I thought about heating up some minestrone soup and mixing the rice into that, but I’d had soup the day before. And I still really wanted that smoothie…

Then it occurred to me that I could have it both ways if I just modified the smoothie recipe a little, so I did.

Into the blender went:


Half a small banana

2 frozen strawberries

a sh*t ton of kale

1/3 cup soy milk (unsweetened, as per usual)

not quite a full scoop of vanilla protein powder

Once it was blended and nice, I poured it into a big mug and sprinkled about a ¼ cup of cereal (a green smoothie without cereal just doesn’t seem complete to me—weird, I know). I heated up the rice and then had the smoothie for dessert. It ended up being the perfect combo. Weird, but perfect.
