Quick and easy meals can either be delicious and efficient or small disasters. For me, the term “microwave dinner” usually brings to mind preservative-laden stuff that lurks in the back of the freezer that you feel vaguely guilty for even buying. However, microwaved dinners can actually be pretty healthy.
I find that when I’m in a rush to get out the door, I look first for anything that’s been cooked already and just needs to be reheated. One recent marathon day, I found myself with twenty minutes to both cook and eat before heading to a show downtown. Luckily, we had leftover kale and tofu, and there were also sweet potatoes, which are easy to cook in the microwave.
After adding a little kung pao sauce to the tofu and some goat cheese to the potatoes, I had a pretty darn good microwave dinner. I even had time to rinse the dishes!
