Daily Plate: Frozen Souffle

I know I posted a recipe for making your own soufflé at home, but sometimes you just don’t have the time.  Enter frozen soufflés.  My mom gave me a couple of these recently to try out and report back on, so a few days ago, when I realized I had to leave for twenty minutes but was growlingly hungry (if that’s a word), I pulled out the roasted vegetable flavor.

I wasn’t sure what to expect. Taking a Food Science and Tech class has made me both more curious and more critical of frozen food products, but what the heck? They’re made by a company called Garden Lites, and I was encouraged to see that all the items on the short list of ingredients were real foods I could pronounce (vegetables, egg whites, whole eggs…). Into the microwave it went.

Eight minutes later, I had a veggie-rich, filling soufflé I wouldn’t have had time to make, ready and waiting to be eaten. It was pretty good, though it could have used a little more seasoning, maybe even just a pinch of salt (that means a lot coming from me) or better yet, some tomato sauce. It may sound weird, but don’t knock it ‘til you’ve tried it.

I would definitely buy the roasted vegetable soufflé again, but first, I’d better see how I like the spinach variety…
